Ingredients

  • 200 g sugar
  • 80 ml water
  • 175 ml heavy cream
  • 30 g salted butter
  • 1 tsp vanilla extract optional

Instructions

  • Add the sugar to the pot, along with the water, and stir until the sugar is thoroughly soaked with the water.
  • Place the pot over medium-high heat. As the sugar heats up, it will transition from a solid to an opaque liquid, eventually becoming a clear syrup, and finally, it will begin to change color.
  • Once the caramel turns amber, turn off the heat and carefully pour in the cream. Be cautious as it may bubble vigorously. Immediately begin stirring constantly.
  • Then, add the butter. If you encounter any crystallized caramel bits, simply place the pot back on medium heat and stir until they dissolve. Be mindful of multitasking while cooking!
