Hailing from the Basque Country region, this cake has gained fame across the United States to Asia, thanks to its creamy texture and caramelized exterior.

Its history is closely tied to the renowned La Viña restaurant in San Sebastián, where the recipe is believed to have originated. Rooted in the vibrant Basque culinary tradition, this tart is known for its simplicity, creaminess, and ease of preparation.

Differences between Basque cheesecake, New York cheesecake and Japanese cheesecake.

Basque cheesecake.

Coming from San Sebastian, Spain, it boasts a creamy center and a subtly burnt exterior, creating a captivating contrast. The key ingredients include cheese, cream, sugar, eggs, and cream.

While traditionally crafted without a cookie base, you can opt to add one if you prefer. There’s always a debate at home: should we make it with or without cookies?

New York-style cheesecake

Emerging from New York, USA, this cheesecake boasts a dense and creamy texture atop a cookie base. It’s commonly adorned with toppings like jam, fruit, chocolate, or caramel.

Japanese cheesecake

Mr. Cheesecake.

A somewhat lesser-known treat in Europe but highly coveted in Japan. Available for online purchase only two days a week (Sunday and Monday), it sells out within minutes, earning it the moniker “ghost cheesecake.”

The mastermind behind this confection is Chef Koji Tamura, who honed his skills studying French cuisine and working at Michelin-starred establishments like the now-closed Tirpse in Tokyo.

Ingredients for making the Basque cheesecake

This cheesecake is made with easily accessible ingredients. Here’s what you’ll need:

  • Cream cheese, feel free to choose your preferred brand, but steer clear of light options.
  • Sugar
  • Eggs
  • Whipping cream, known as crème fraîche in some countries.
  • Cornstarch, if you do not have it, you can substitute it with flour for pastry.
  • Vanilla extract

Optionally, if you desire to include a cookie base, you’ll also require cookies and butter.

Ingredients

Cookie base (optional)

  • 150 g cookies Digestive Type
  • 70 g butter

Cheesecake

  • 320 g cream cheese Philadelphia type
  • 85 g sugar
  • 110 g eggs
  • 190 g heavy cream
  • 10 g cornstarch
  • 1 tsp vanilla extract
Makes: 15cm round

Instructions

  • Preheat the oven to 220 °C and prepare the 15 cm tin with baking paper.
  • Optionally, crush the 150 g cookies and mix them with the previously combined 70 g butter . Once prepared, press the mixture into the mold covered with baking paper.
  • In a bowl, whip the 320 g cream cheese. Add the 85 g sugar and continue to mix. Incorporate the 110 g eggs one at a time, continuing to mix.
  • In another bowl, combine the 190 g heavy cream and 10 g cornstarch, and mix well. Add this cream and cornstarch mixture to the initial cream cheese mixture. Whisk the ingredients together, add the 1 tsp vanilla extract, and mix once more.
  • Pour the combined mixture into the prepared mold. For a smoother and creamier texture, it's recommended to pass the mixture through a blender.
  • Bake the cheesecake at 220 °C for 18 to 22 minutes, depending on your oven. Once done, allow it to cool. Ideally, refrigerate for 12 hours before enjoying this fabulous cheesecake.
