A good sponge cake, especially a lemon-flavored one, is a must-have in any collection of recipes.

Sponge cakes are universally loved for their simplicity, minimal preparation, and the fact that they can be made with ingredients commonly found in the pantry. They are especially great for beginners in the world of baking.

One of my earliest memories in the kitchen involves making a cake with my mom when I was very young. I can still picture measuring ingredients with yogurt cups, using an electric mixer, and eagerly watching the cake rise in the oven. While I don’t recall devouring it, given my current love for cakes, I’m certain I did.

These memories might be the reason why I subconsciously developed a deep affection for lemon-flavored cakes.

Starbucks-Style Lemon Sponge Cake Recipe:

Years ago, working near a Starbucks in Barcelona, I often found solace in their lemon sponge cake when I needed a break from work. It quickly became one of my favorites, striking the perfect balance between sweet and tangy.

The Starbucks version stands out by featuring a delectable lemon glaze. However, this step is optional. If you prefer a less sweet version, you can omit the glaze.

Easy-to-Prepare Lemon Sponge Cake:

While many cake recipes traditionally use yogurt pots as a measuring tool, this recipe, using a kitchen scale, a cake pan, and two bowls, is just as simple. All you need is a hand mixer, whether manual or electric.

An Easy Sponge Cake Recipe

In my opinion, the version I’m sharing with you is the epitome of a perfect lemon cake. While traditional sponge cakes often include butter, I opt for sunflower oil. This neutral oil doesn’t alter the flavor but results in a lighter-textured cake.

To infuse the cake with that distinctive citrus taste, I use both grated lemon peel and lemon juice. The glaze, made from powdered sugar and lemon juice, adds a final touch of simplicity, intensifying the lemon flavor and achieving the ideal balance between sweetness and acidity.

Ingredients

Lemon sponge cake

  • 195 g flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 200 g sugar
  • 113 g sunflower oil
  • 3 eggs
  • zest of 1 lemon
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 125 g yogurt

Lemon Glaze

  • 120 g powdered sugar
  • 2 tbsp lemon juice

Instructions

Lemon sponge cake

  • In a bowl, combine the 195 g flour, 1 tsp baking powder, and 1 tsp salt . Mix well and set aside.
  • In another bowl, add the 200 g sugar and 113 g sunflower oil. Mix until well combined.
  • Add the 1 tsp vanilla extract and zest of 1 lemon to the sugar-oil mixture. Mix thoroughly.
  • Add the 3 eggs, one at a time, beating well between each addition.
  • Once the eggs are fully incorporated, add half of the flour mixture to the batter. Mix until just combined.
  • Add the 125 g yogurt and freshly squeezed 2 tbsp lemon juice to the batter. Mix well.
  • Finally, add the remaining half of the flour mixture and beat until everything is well mixed.
  • Preheat the oven to 160º C (320º F).
  • Pour the batter into a prepared cake mold.
  • Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven, unmold it, and let it cool to room temperature.

Lemon Glaze

  • Once the cake has cooled, prepare the lemon glaze by mixing 120 g powdered sugar with 2 tbsp lemon juice.
  • Decorate the cake with the glaze. You can apply it with a spoon for a rustic effect or use a piping bag to create a zigzag pattern.
  • Enjoy your delicious homemade lemon sponge cake with a delightful lemon glaze!
