Traditionally, they are filled with octopus, spring onion, tempura bits, and ginger pickles, and served with takoyaki sauce, Kewpie mayonnaise, and optional toppings like spring onion, ginger pickles, katsuobushi, or aonori.

  • 180 ml dashi
  • 60 g flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp soy sauce

  • 1 spring onion cut into small pieces
  • 1 tbsp beni shouga cut into small pieces


  • takoyaki sauce to taste
  • kewpie mayonnaise to taste

  • katsuobushi to taste
  • aonori to taste


Prepare the octopus:

  • Slice the octopus into small pieces.
  • In a large skillet over medium heat, add the octopus and allow it to cook until it releases its juices.
  • Once the liquid has evaporated, the octopus is cooked and ready.

Prepare the batter:

  • In a mixing bowl, combine the dashi and eggs, and beat until well mixed.
  • Add the soy sauce and mix again.
  • Gradually add the dry ingredients: flour, baking powder, and salt. To prevent lumps, it's best to sift them.
  • Whisk the mixture thoroughly, or use a blender to ensure a smooth consistency. If you don't have a blender, you can strain the batter to remove any lumps.

Cook the Takoyaki:

  • Add a small amount of oil to a frying pan (approximately 13x18cm) and spread it evenly using a paper towel.
  • Heat the pan over medium-high heat.
  • Pour the takoyaki batter into the pan, aiming for a thickness of about 1.5cm.
  • Place the octopus, beni shōga, and spring onion into the batter, but only halfway down.
  • Once the batter begins to cook, fold it in half (as shown in the photo).
  • Allow it to cook for about 40-50 seconds, then flip it over. Continue this process until the takoyaki is cooked through. Cooking time may vary but should take around 4 minutes. Adjust heat and timing as needed.
  • Once cooked, remove from heat.


  • Drizzle the takoyaki with takoyaki sauce, a dollop of Kewpie mayonnaise, and, optionally, garnish with spring onion, katsuobushi, aonori, or beni shōga.
  • For a traditional takoyaki presentation, cut it into bite-sized squares before serving.
