Today, I’m excited to share with you the steps to create an authentic pasta carbonara – and, notably, without cream!

While the history of pasta carbonara is a bit intricate, with various theories about its origin, the most widely accepted narrative suggests its creation during World War II. American soldiers stationed in Italy shared their bacon and eggs with the locals. The Italians, unfamiliar with these ingredients, began incorporating them into their pasta, giving rise to the birth of pasta carbonara.

  • Eggs
  • Pecorino Romano cheese (Parmesan cheese can be a substitute if unavailable)
  • Guanciale, bacon, or pancetta
  • Black pepper

Pasta carbonara, with or without cream?

As previously mentioned, the genuine carbonara sauce is crafted without cream. The widespread popularity of pasta carbonara, however, led to experimentation and innovation in various regions, resulting in an alternate version of the famed dish that does include cream.

How to prepare spaghetti carbonara.

Making spaghetti carbonara is a breeze.In a bowl, combine grated pecorino cheese, egg, and pepper. Simultaneously, cook the guanciale and set the pasta to boil.

Once the pasta is cooked, reduce the heat and add it to the pan with the guanciale. Introduce the egg and cheese mixture, along with a couple of tablespoons of the pasta cooking water, to the pan. Quickly stir until the eggs are cooked, creating a creamy sauce. If the sauce appears too thick, add a bit more of the pasta cooking water.

And there you have it! Serve the pasta topped with some grated pecorino cheese, freshly ground black pepper, and savor the deliciousness.

Ingredients

  • 85 g pasta
  • 25 g guanciale or bacon
  • 25 g pecorino or parmesan cheese
  • 1 egg
  • 1 pinch pepper

Instructions

  • Combine 25 g pecorino grated cheese, 1 egg, and 1 pinch pepper in a bowl.
  • In a large pot, bring water to a boil, and once boiling, add 85 g pasta .
  • Simultaneously, in a frying pan, cook the 25 g guanciale.
  • When the pasta is cooked, reduce the heat and transfer it to the pan with the guanciale.
  • Add the egg and cheese mixture to the pan, along with a couple of tablespoons of the water used to cook the pasta. Stir rapidly until the eggs are cooked, forming a creamy sauce. If the sauce is too thick, incorporate a bit more of the pasta cooking water.
  • And there you have it! Serve the pasta, garnish with grated pecorino cheese, freshly ground black pepper, and savor the dish.
