Curry udon has been a favorite dish in Japan for quite some time. While it may not have the same level of popularity as curry rice, it’s perfect for a cozy weeknight meal during the winter months.

A simple and quick dish to whip up

The beauty of curry udon lies in its simplicity and ease of preparation. It’s the ideal dinner option for those busy days when you’re short on time or simply don’t feel like spending hours in the kitchen.

How to make curry udon: Ingredients & Variations

Japanese Curry

I’ll admit, even though I’m not typically a fan of “ready-to-eat” foods, Japanese curry bars are an exception. Despite my attempts to recreate that homemade Japanese curry with a WOW factor, it still remains elusive. But don’t worry, I haven’t given up just yet! Nowadays, Japanese curry preparation tablets are readily available in various brands and spice levels, making it effortless to whip up dishes like kare raisu or this udon curry.

Toppings

For this recipe, I’ve opted for thinly sliced beef, but feel free to swap it out for tofu, pork, chicken, or any other protein of your choice.

Udon Noodles

The udon noodles are a crucial component of this dish. I recommend steering clear of pre-cooked noodles, as they tend to lack texture and flavor. Instead, opt for fresh or frozen udon noodles. If those aren’t available, dry udon noodles are a suitable alternative.

  • 150 g beef finely sliced, see note
  • 1 tbsp sake
  • 750 ml dashi
