How to make curry udon: Ingredients & Variations

Japanese Curry

I’ll admit, even though I’m not typically a fan of “ready-to-eat” foods, Japanese curry bars are an exception. Despite my attempts to recreate that homemade Japanese curry with a WOW factor, it still remains elusive. But don’t worry, I haven’t given up just yet! Nowadays, Japanese curry preparation tablets are readily available in various brands and spice levels, making it effortless to whip up dishes like kare raisu or this udon curry.


For this recipe, I’ve opted for thinly sliced beef, but feel free to swap it out for tofu, pork, chicken, or any other protein of your choice.

Udon Noodles

The udon noodles are a crucial component of this dish. I recommend steering clear of pre-cooked noodles, as they tend to lack texture and flavor. Instead, opt for fresh or frozen udon noodles. If those aren’t available, dry udon noodles are a suitable alternative.

  • 1 onion
  • 2 chives
  • 1 tbsp oil
  • 150 g beef finely sliced, see note
  • 1 tbsp sake
  • 750 ml dashi
  • 50 g japanese curry S&B
  • 2 tsp soy sauce
  • 2 portions udon noodles


  • Rinse the spring onion and thinly slice it. Set aside.
  • Thinly slice the onion.
  • In a pot, heat the oil over medium-high heat. Add the sliced onion and sauté for 5-10 minutes until it begins to lightly brown.
  • Add the meat and cook for a couple of minutes until it's no longer pink.
  • Pour in the sake, followed by the dashi. While instant dashi can be used, homemade dashi is recommended for best flavor.
  • Cover the pot and let it simmer over medium heat for about 5 minutes.
  • Skim off any grey foam that forms on the surface after 5 minutes.
  • After 10 minutes, turn off the heat and stir in the curry mixture until well dissolved.
  • Add the soy sauce.
  • Prepare the udon noodles: Bring a pot of water to a boil, cook the noodles according to package instructions, and then drain.
  • Serve the noodles in bowls, topped with the curry broth and the sliced spring onion reserved earlier.
